For gongfu brewing, the strainer sits over the fair cup or drinking cup and catches the fines a pot lets through. Ours is glazed celadon over stoneware with a fine steel mesh set into the ring, and it ships with the piece most strainers forget: a matching rest that keeps drips off the tray between pours.
It is a small object that earns its place every session – and one of the pieces guests pick up and ask about most.
