A half-sheet tray in aluminised steel, 1.0 mm thick with a rolled steel rim. That gauge is the reason it does not bow and clang when it goes from a cold oven to 220 °C, which is the failure that makes thin supermarket trays annoying to use.

Size

39 × 27 cm with a 2.5 cm lip clears the sides of a standard 60 cm oven with room for air to move around it. Two of them fit on one shelf in most ovens; measure yours first.

Finish

Aluminised steel is uncoated. It browns evenly, it takes metal spatulas, and it will not blister the way a non-stick tray does above 200 °C. It also is not non-stick, so line it with paper for anything sugary.

Care

Hand wash. Aluminised steel darkens and mottles with use. That is normal patina, not damage, and a darkened tray browns slightly faster. A dishwasher will strip the aluminium coating and leave the steel to rust, so keep it out of one.
