Three knives cover almost everything a home kitchen does. A 20 cm chef’s knife for the bulk of the chopping, a 15 cm utility knife for a tomato or a chicken breast, and a 9 cm paring knife for the work you do in your hand. Buying a fourteen-piece block means paying for eleven knives you will not use.
Construction
Each blade is stamped from a single piece of high-carbon stainless steel and runs full tang through the handle, held with three rivets. That is heavier and more durable than a partial tang, and it means the balance point sits just forward of the bolster where you hold it.
Sharpening
They arrive sharp and they will not stay that way. A few passes on a honing steel before use keeps the edge straight; a whetstone or a professional sharpening service resets it once or twice a year depending on how much you cook. Any knife sold as never needing sharpening is being sold dishonestly.
Care
Hand wash and dry immediately. A dishwasher will blunt the edges against other items and the detergent is hard on the handle. Store them on a magnetic strip or in a block, not loose in a drawer.
