A single piece of cast iron with the handle cast in, pre-seasoned with vegetable oil at the foundry. It weighs 2.4 kg, which is the whole point: that mass is what lets a steak hit the surface without the pan temperature collapsing.

What it is for

Searing, cornbread, roast chicken thighs, anything that starts on the hob and finishes in the oven. It can go under a grill and it can sit on a fire. There is no plastic, no coating and no rivet on it to fail.

What it asks of you

Be honest with yourself about this one. Bare cast iron needs seasoning and it will rust if it is left wet or stored damp. After washing, dry it on the hob for a minute and wipe a few drops of neutral oil over the cooking surface with a paper towel. Long simmers of tomato or wine will strip seasoning back, so use stainless for those. Rust is not fatal: scour it back to grey metal, re-season it, and the pan is as good as it was.

Seasoning

The factory seasoning is a starting layer, not a finished one. It darkens and gets slicker over the first ten or twenty cooks, faster if you fry in it. Our seasoning and care guide sets out the oven method if you want to build it up quickly.
