Cast iron with a vitreous enamel coating fired onto both faces. The enamel means you get the heat retention of iron without the seasoning routine, and you can cook tomato, wine and vinegar in it for hours without stripping anything back.
5.5 litres takes a 1.8 kg joint, a chicken with vegetables around it, or a batch of stew for six with room to stir. It is 24 cm across the base, which suits a standard oven shelf and most hob burners. Filled, it is heavy (4.9 kg empty, closer to 8 kg with a braise in it) so check you can lift that out of an oven before you order.
The lid seals well enough to trap steam for the first part of a bake, which is why people use these for sourdough. Preheat the empty pot, then lower the dough in.
Enamel chips. Knocking the rim against a tap, dropping the lid onto the rim, or letting an empty pot run dry over high heat will damage it, and a chip cannot be repaired. It can only be watched. Use wooden or silicone tools, let it cool before washing, and do not use it under a grill. Interior staining from turmeric or tomato is cosmetic and lifts with a paste of bicarbonate of soda.
