Two litres is the size that gets used. It holds enough pasta water for two, a pint of custard without the risk of a boil-over, or rice for four. The interior is marked in 250 ml steps so you can measure stock without a jug.
Sauces and starches scorch in the hot ring directly over a burner. The 2.6 mm tri-ply base spreads that heat across the whole bottom, which is the difference between a béchamel you can walk away from for thirty seconds and one you cannot. It also means the pan works properly on a small burner or an induction hob that only heats the centre.
The lid is stainless with a rolled edge, not glass. Glass looks better in a photograph and cracks when it is dropped or taken from a hot pan to a cold surface. This one is oven safe with the pan.
Milk and starch leave a film. Fill the warm pan with water and leave it while you eat; it will wipe out. Burnt sugar comes off with water brought back to the boil in the pan. Do not use bleach-based cleaners on stainless.
