Eight litres, 24 cm across, straight sided. It is the pot for stock, a full box of pasta, a batch of chilli you intend to freeze, or holding jars steady in a water bath.
The tri-ply construction runs across the base and up into the lower wall, so a long simmer does not scorch on the bottom. The upper wall is single-layer stainless, which keeps the empty weight down to 2.6 kg, a fully clad 8 litre pot would be noticeably heavier to carry full of water.
Two side handles, riveted, wide enough for oven gloves. They are stainless and get hot; there is no silicone sleeve to perish or melt against a burner.
Stainless will develop a faint rainbow tint where it has been heated hard and dry. It is harmless oxidation and vinegar takes it off. Salt added to cold water can leave small pits in the base if it sits undissolved, so salt the water once it is boiling.
