Description
Where the gyuto favours push cuts, this western profile carries a fuller belly for cooks who rock the blade through herbs and garlic. The layered damascus-pattern cladding is more than decoration: the softer outer layers support a hard cutting core at HRC 58-62 typical, and the pattern hides the small scratches of honest daily work.
The black micarta handle is nearly indestructible – impervious to water, dishproof in feel, grippy even with wet hands. A full bolster keeps fingers clear of the heel. Like every knife we sell, it ships on a fresh water-stone edge, checked by hand.
