Safe Knife Storage: Strips, Blocks and Rolls
Strips for the wall, open blocks for the counter, rolls for the road - storage that keeps edges keen and…
Hand-finished on water stones before it ships
Every blade that leaves our bench has already been walked through a full grit progression on the stones, not just factory-ground and boxed.
High-carbon stainless style steel, HRC 58-62 typical.
Every blade leaves on a fresh water-stone edge, checked by hand.
Tracked delivery, blades sheathed and double-boxed.
Mail-in regrind service at cost, for as long as you own it.
The Edge Lab
Factory edges are where we start, never where we stop. Each blade is worked on flattened water stones at a held angle, stropped clean, then sighted down the spine and tested against tomato skin before it earns its sheath. That is the difference you feel on the first onion.

From the board
The gyuto arrived frighteningly sharp and a year on it still is - ten minutes on the stone every few weeks is all it has ever asked of me.
I asked which stone to buy first and they talked me down to the cheaper combination stone. It was the right call - and now I trust the whole catalogue.
The gift duo made my brother unpack it like treasure - the wooden box, the cloth, the little care card. He cooks now. Ordering another for our dad.
Start simple
A chef knife that fits your hand, a combination stone that keeps it honest and a board that is kind to edges - that is the whole starter kit. Add a honing rod when the habit takes hold, and skip the knife block of blades you will never draw.
