Keeping fermentation cool: how brewery cooling systems work
Every beer has a temperature it likes to ferment at. Holding it reliably is the job of the cooling system — and good design matters more than a big chiller.
Fermenting beer produces heat, and every style of beer has a temperature it likes to ferment at. Keeping each tank at its right temperature — reliably, around the clock — is the job of the brewery’s cooling system, and it is one of the most underrated parts of a well-run brewery.
How brewery cooling works
Most breweries cool their tanks with a chilled liquid that circulates from a central chiller, through insulated pipes, to cooling jackets wrapped around each tank. A thermostat on every tank opens and closes a valve to hold that tank at its own set temperature — one tank can sit cold while its neighbour ferments warm.
The chiller is rarely the whole answer
When a brewery struggles to hold temperature, the first instinct is to blame the chiller and buy a bigger one. In our experience the chiller itself is the culprit only a minority of the time. More often the problem lies in how the system around it was designed: pipes that are too small to feed the furthest tanks, no reserve of chilled liquid to absorb sudden demand, or temperature sensors placed where they read the wrong thing.
This is why cooling deserves to be designed as a system, sized around your actual brewing schedule, rather than assembled from parts.
What a well-designed system gives you
Every tank holds its temperature, whatever the tanks around it are doing — even when one is being chilled down hard while another is in the warmest phase of fermentation.
The machinery runs calmly. A properly sized system with a reserve tank of chilled liquid runs in long, steady cycles instead of constantly switching on and off, which keeps energy bills down and makes the equipment last longer.
The brewer stays in control. Modern tanks can have separate cooling zones, letting the brewer chill one part of the tank while keeping the rest warm — a genuinely useful tool for producing consistent beer.
Simple habits that keep it healthy
Cooling systems are quietly reliable, but they reward a little attention. Have the coolant checked once a year, keep the pipe insulation intact, and make sure temperature sensors are calibrated from time to time. These are small jobs that prevent expensive surprises.
