Description

Chefs asked for this. The difference between a knife roll and a tool roll is that knives ruin each other: a chef knife rattling against a paring knife will take the edge off both by the end of a shift.

Guards

Between each slot sits a folded strip of 2 mm leather that stands proud of the blade. Roll it up and every edge is isolated in its own channel.

Closure

A 20 mm strap with a cast brass buckle. Tied closures need two hands and a moment of attention; a buckle does not.

Care in a kitchen

Wipe it down at the end of service and let it dry away from the pass. Do not put it near an oven vent — leather cooks.
