Wet beans were boxed the day they were cut, turned every 24 hours, then sun-dried on raised beds until they held twelve per cent moisture. Nothing in this record is averaged across harvests.
Most drinking chocolate is alkalised cocoa powder with sugar. This is the actual bar, shaved coarse, so it melts into milk or water and leaves a real cocoa butter weight on the tongue.
We sweeten with muscovado rather than white sugar because the molasses meets the Alto Mirador acidity halfway. There is a quarter teaspoon of sea salt in every tin, which you will not taste as salt — it just stops the drink going flat.
Four heaped teaspoons into 200 ml of whole milk, whisked over a low heat. Twelve servings per tin.
