Description

Once a brewery passes about a dozen vessels, the question stops being “what is this tank doing” and becomes “what is the plant doing”. The SCADA suite sits above the cabinets and answers the second question.

Versioned recipes

Every recipe change creates a new version with an author and a timestamp. The old version stays runnable. When a beer that was fine in March is wrong in September, the difference is visible in one screen.

Records that survive an audit

Batch records export as signed PDF alongside the raw CSV. Access is per-user with a full audit trail, and the historian can be mirrored if losing the data would be a regulatory problem rather than an inconvenience.

Engineering highlights

  • Live plant mimic shows every vessel, its setpoint, its actual and the recipe step it is sitting in.
  • Recipes are versioned with sign-off, so a change is attributable and the previous version is still runnable.
  • Five years of ten second trend data, which is long enough to answer questions about last summer.
  • Read-only browser access means the head brewer can check the cellar from home without being able to break it.

Process flow, stage by stage

Select any stage to read what happens inside it, the process parameters we hold it to, and exactly which systems in the catalogue cover that part of the line.

The Process

Grist milling and dry handling

A two-roller mill cracks the husk without shredding it, then a dust-tight auger drops the grist straight into the hydrator. Gap is set from the panel so the same recipe delivers the same crush every single brew day.

Roller gap 0.9 – 1.2 mm
Grist throughput 600 kg/h
Dust extraction ATEX rated
