Wet beans were boxed the day they were cut, turned every 24 hours, then sun-dried on raised beds until they held twelve per cent moisture. Nothing in this record is averaged across harvests.
Milk chocolate is usually where a maker hides a mediocre bean. We went the other way and used the same Rio Verde liquor that goes into our seventy-two, dropped the cacao to forty-five per cent, and made up the difference with whole milk powder rather than extra sugar.
The result is a bar that still tastes of cacao. There is caramel from the milk solids and a shortbread weight on the palate, but the red-plum note from the six-day ferment survives underneath. It melts slowly because we did not add cocoa butter back — the fat is all native to the bean.
Rested three days after moulding. Best eaten within four months while the milk is still bright.
