Wet beans were boxed the day they were cut, turned every 24 hours, then sun-dried on raised beds until they held twelve per cent moisture. Nothing in this record is averaged across harvests.
We toast whole rolled oats on a sheet tray until the kitchen smells like a bakery, then mill them into the melanger with the nib. No dairy, no oat milk powder bought in a sack — just grain and cacao and cane sugar.
What you get is a bar with the body of a milk chocolate and the flavour of malted barley. It is the one we hand to people who tell us they do not like dark chocolate, and it is the one that sells out first at the counter.
