Wet beans were boxed the day they were cut, turned every 24 hours, then sun-dried on raised beds until they held twelve per cent moisture. Nothing in this record is averaged across harvests.
Alto Mirador sits high enough that the pods ripen slowly and the beans come in small. The seven-day ferment is longer than we use anywhere else, and it pushes the profile into jasmine and green banana territory that people either love immediately or need a second sitting to hear.
There is a black-tea tannin on the finish. That is not a flaw and it is not over-roasting — it is what Nacional does at this altitude, and sanding it off with more sugar would be the wrong answer.
