Wet beans were boxed the day they were cut, turned every 24 hours, then sun-dried on raised beds until they held twelve per cent moisture. Nothing in this record is averaged across harvests.
At eighty-five per cent there is nowhere to hide. A flat ferment or a scorched roast shows up immediately, which is why we only take this percentage to the Cauca Alta lot — the shorter five-day ferment leaves enough sugar in the bean to keep the bar round rather than chalky.
Walnut skin first, then dried fig, then a wood-smoke note from the drying beds that the growers run on a covered rack. It is dry on the finish and it is supposed to be.
If you find eighty-five per cent bars harsh, this is the one to try before you give up on them.
