Wet beans were boxed the day they were cut, turned every 24 hours, then sun-dried on raised beds until they held twelve per cent moisture. Nothing in this record is averaged across harvests.
If you only ever eat one bar of ours, make it this one. Rio Verde is the estate we have bought from longest, and the six-day box ferment is the protocol we worked out with them over three harvests of arguing about turn times.
The bar opens with red plum, settles into cane molasses, and finishes on toasted almond with almost no astringency. The roast is deliberately short and low for a seventy-two — pushing it further would flatten the fruit that the ferment built.
Ingredients: cacao, organic cane sugar. Nothing else. Not even vanilla, which is what most makers reach for when the bean is thin.
