Wet beans were boxed the day they were cut, turned every 24 hours, then sun-dried on raised beds until they held twelve per cent moisture. Nothing in this record is averaged across harvests.
Bought candied peel is syrupy and tastes of nothing but sugar. We candy ours over six days, raising the syrup density a little each morning, so the peel keeps its bitterness and its oils.
Against the jasmine-and-green-banana profile of Alto Mirador, that bitterness reads as marmalade rather than sweets. There is a clove note at the finish that nobody adds — it comes out of the seven-day ferment.
Currently priced at batch rate: this is the last of the mid-crop lot and the main-crop version will taste different.
