Wet beans were boxed the day they were cut, turned every 24 hours, then sun-dried on raised beds until they held twelve per cent moisture. Nothing in this record is averaged across harvests.
The nib in this bar is not a garnish from another lot — it is winnowed from the same Cauca Alta beans that made the liquor, held back before grinding and stirred in cold at the end so it stays crunchy.
Salt goes on the base of the mould rather than the top, which means it hits the tongue first and opens up the dark cherry underneath. Use a light hand with it and you get contrast; use a heavy hand and you get a savoury bar. We weigh it.
